preserved horseradish

if you ever have the good fortune of stopping at your local farmers market and spying one of these beauties

then i suggest you don't ask questions.

just pick one up, get to your nearest grater, and once peeled, grate that baby into fine shreds.

like this:


place these fine shavings into a clean and dry jar and pour rice vinegar or cider vinegar over to cover.


these few small acts will allow you to have fresh-from-the-farm preserved horseradish pretty much indefinitely, or until you eat it all (in sandwiches, cocktail sauce, egg salad) whichever comes first.

then why I ask you...

would you want a boar's head to do for you what you could much better do for yourself?

besides,

hasn't he got enough on his mind?

  1. Do you not need to properly preserve horseradish? Just coating it with vinegar will last forever in the fridge?

    well i would say nothing last forever! but preserving horseradish in vinegar and storing it in the fridge is properly preserved - it should last for a good year at least!

  3. How long do you leave your grated horseradish to sit before dousing it with vinegar? I've heard it stops the flavour from continuing to strengthen.
