can jam round-up august: tomatoes

tomatoes, tomatoes, tomatoes! for many the king of vegetables (even though we all know it's a fruit don't we?) grown for putting up.
just as the mighty tomato straddles the veggie-fruit kingdoms, it also straddles the level of acidity needed to safely water bath can. a lot of old recipes don't add acid before hot water bath canning, but modern times call for such measures. so if you're trying this at home, make sure to use a source that follows the current USDA guidelines. or go straight to the source yourself. have a look here to find out why i'm roaring about this.

if you don't have a pH meter and know how to use it, don't try this at home. i am worried that the acidity level could pose a problem - safest to stick to exact recipes that follow the usda guidelines for low acid foods.

And second, a fire-roasted pico de gallo that I can't keep stocked in the house! I make a batch at least once a week each summer . . . I make mine lacto-fermented just by adding a little whey and it lasts (fresh! uncooked salsa!) in the fridge for months. If it doesn't get eaten first!

Yay! It’s finally Tomato Week! I’m celebrating all week by posting some new tomato recipe discoveries as well as some old family faves. Yesterday, I began with Neely’s Chicken Salad in Tomato Cups:

Regarding the tomato juice that was a byproduct of Wine Book Girl's crushed tomatoes: Wine Book Girl and I met 2 years/3 canning seasons ago in a tomato canning class and have been canning with increasing frequency ever since (in addition to tomatoes, we canned almost 40 lbs of peaches this month). The tomato juice (technically tomato water) that is a by-product of canning crushed tomatoes and tomato sauce was a revelation to me too. In addition to being absolutely delicious, skimming off the juice that rises in the pot allows sauce to thicken quicker. I highly recommend that if you are making sauce, first cook the tomatoes a while, skim the juice, and then add seasonings. Some of the juice from yellow heirloom tomatoes is almost clear and I'm planning to make trick cocktails that have all the flavor of a Bloody Mary, but are clear (a friend who worked for a caterer gave me the idea: she said they made an amuse bouche gazpacho using tomato water that looked like water with a few floating bits of vegetable. It always pleasantly surprised people who were expecting something tasteless)

ReplyDeleteI just wanted to point out that I've updated my recipe to specifically call out the inclusion of 2 tablespoons of bottled lemon juice, which pushes it directly into the safe zone. The questionable nature of things was a result of writing up my recipe too late at night.
ReplyDeleteHi Tigress - regarding my ketchup, the fennel just blends with all the other spices and tastes, so I wouldn't say you would notice it on it's own. I'm not a big anise fan, so that's a good indicator that it's not overpowering. Also, I did a simple crushed tomato sauce along with the ketchup that is my standard that I have to make every year, it's really good as a basic sauce.
